Using traditional tools like a gaiwan? Follow this step-by-step guide:


Tea-to-Water Ratio

Rock Oolong (Yancha): 8g of tea + 110ml of water

Black Tea: 5g of tea + 110ml of water
This is what we call the golden ratio. Get it right, and your tea will turn out beautifully.

Step 0: Water temperature matters ... a lot!
Get the temperature correct, and the aroma makes a grand entrance immediately. Too hot or too cold? It ghosts you; half the magic, gone!

Rock oolong loves it hot: 95–100°C to bring out its signature “rock rhyme”

Black tea prefers a gentler touch: 90–95°C to preserve its delicate sweetness
• Tips: Use spring or purified water if you can—it brings out the true character of Wuyi tea.

Step 1: Pre-heat the steeping cup
Pour hot water over your teaware to preheat it—just like a mini spa for your cups. Using a gaiwan for your steeping cup helps but isn't necessary.
This simple step helps the aroma bloom more fully.

Step 2: Put the tea leaves into the steeping cup
Drop the tea into the gaiwan, cover it, and give it a gentle shake. Let the rising warmth awaken the leaves.
Lift the lid and take a slow inhale—this is where Wuyi’s mountain soul starts to whisper.

Step 3: Pour hot water in and let it steep
After pouring hot water in, give it a short rest. Here’s a guide based on how many times you’ve steeped:

Steeps 1st–3rd times: around 3 seconds for a quick infusion

Steeps 4th–6th times: 5–10 seconds to deepen the flavour

Steeps 7th–12th times: take your time—15–30 seconds
It’s not about brewing longer. It’s about growing closer with each steep.

Step 4: Pour the tea into your drinking cup
Don’t hesitate. Once it’s time, pour decisively. Good tea prefers confidence. Make sure to avoid pour the tea leaves with it so you can ready the next steep (Step 3).

Step 5: Sip and savour
Enjoy slowly. Let the tea unfold slowly.
